Chive Butter

12 tbsp (1½ sticks) unsalted butter
2 tbsp chopped fresh chives
2 tsp finely diced shallots
Juice of ½ lemon
Salt & freshly ground pepper to taste

Combine all ingredients until lemon juice is completely incorporated into the butter. Store in refrigerator until firm.
