Cilantro: "The 2-in-1 Herb"

A leafy herb, Cilantro (Coriandrum sativum) produces the seed we know as Coriander. This multi-dimensional herb has been documented as far back as the biblical times. It is noted in Exodus 16:31 “(manna) was white like coriander seed.” The seed is also found in the tombs of Ancient Egypt. Noted in journals in Massachusetts as far back as 1670, making it is one of the earliest known spices to come to America. Cilantro is native to the Mediterranean areas and is often referred to as Chinese parsley.

Surprisingly, There is a very distinct taste difference between the cilantro leaf and the coriander seed. The coriander seed is considered a spice that has a nutmeg taste with a mild burning flavor. This is best used in breads, baked fruit, sausage, and meats and it is a main ingredient in curry powder that is widely used in East Indian, Greek, and Asian cuisine. The cilantro leaf has a slight pungent odor, which appeals to some and offends others. Cilantro is an essential ingredient in making salsa (my favorite use) and other Mexican dishes. It goes well with most hot and spicy flavorings. Chinese, Indian, and Mediterranean cuisine use cilantro in soup, stir-fry, stuffing, and salad.

Cilantro is a tender perennial, which means that cold temperatures can damage it. It is best to plant after the danger of frost. It prefers well-drained soil with a sunny location. However, in high humidity areas it is advised to plant in a partial-sun location because the hot and humid conditions will make the cilantro “bolt” or go to seed. If coriander is what you are after then go ahead and plant in full sun, but if you want the leaf, plant in part-sun. In these climates, it is best to plant in the cooler months of the year and then reseed every 2-3 weeks in order to keep a constant supply throughout the growing season. You can harvest cilantro at anytime. The younger growth is more tender and flavored than the older leaves. Cilantro does not dry well, so, it is advised to freeze the leaves in a tray of ice cubes for future use.
